  • 8 oz (225 g) pasta (your choice, such as rotini or penne)
  • 1 lb (450 g) ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 2 green onions, sliced
  • Tortilla chips, for serving

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef or turkey. Drain any excess fat.
  3. Add the taco seasoning to the meat along with 1/4 cup of water. Stir to combine and let simmer for 5 minutes.
  4. In a large bowl, combine the cooked pasta, seasoned meat, black beans, cherry tomatoes, corn, and shredded lettuce. Toss to mix well.
  5. Add the salsa and sour cream to the pasta mixture and gently fold until everything is evenly coated.
  6. Top with shredded cheese and green onions. Serve with tortilla chips on the side.
