- 8 oz (225 g) pasta (your choice, such as rotini or penne)
- 1 lb (450 g) ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup corn (canned or frozen)
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1/4 cup sour cream
- 2 green onions, sliced
- Tortilla chips, for serving
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef or turkey. Drain any excess fat.
- Add the taco seasoning to the meat along with 1/4 cup of water. Stir to combine and let simmer for 5 minutes.
- In a large bowl, combine the cooked pasta, seasoned meat, black beans, cherry tomatoes, corn, and shredded lettuce. Toss to mix well.
- Add the salsa and sour cream to the pasta mixture and gently fold until everything is evenly coated.
- Top with shredded cheese and green onions. Serve with tortilla chips on the side.
