- 2 lbs boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- Tortillas, for serving
- Toppings: shredded cheese, lettuce, diced tomatoes, avocado, sour cream
Instructions
- Place the chicken breasts in the crockpot.
- Sprinkle the taco seasoning over the chicken.
- Pour the salsa, black beans, and corn on top of the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and easily shredded.
- Once cooked, shred the chicken with two forks and mix everything together.
- Serve in tortillas with your favorite toppings.
