  • 1/2 teaspoon salt
  • Royal icing for decoration (store-bought or homemade)

  • Cookie cutters in graduation shapes (caps, diplomas, etc.)

Instructions

  1. In a medium bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in the egg, vanilla extract, and almond extract (if using). Gradually blend in the dry ingredients until fully incorporated.
  3. Divide the dough into two discs and wrap in plastic wrap. Refrigerate for at least 1 hour to firm up the dough.
  4. Preheat your oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes and place them on ungreased baking sheets.
