- 1/2 teaspoon salt
- Royal icing for decoration (store-bought or homemade)

Instructions
- In a medium bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in the egg, vanilla extract, and almond extract (if using). Gradually blend in the dry ingredients until fully incorporated.
- Divide the dough into two discs and wrap in plastic wrap. Refrigerate for at least 1 hour to firm up the dough.
- Preheat your oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes and place them on ungreased baking sheets.
- Bake for 8 to 10 minutes in the preheated oven until golden. Let cool completely before decorating with royal icing and food coloring to create fun graduation designs.
