- 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving
Instructions
- In a bowl, combine chicken pieces with soy sauce and cornstarch. Mix well and let marinate for 15 minutes.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining olive oil. Add the sliced bell peppers and broccoli florets. Stir-fry for about 5 minutes until vegetables are tender-crisp.
- Add the minced garlic and ginger to the skillet, cooking for an additional minute until fragrant.
- Return the cooked chicken to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve hot over cooked brown rice or quinoa.

- Feel free to add other vegetables such as snap peas, carrots, or mushrooms.
