Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  3. Once the quinoa is cooked, let it cool slightly, then add it to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
