- 6 cups mixed greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled
- Balsamic vinaigrette dressing
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Brush the chicken breasts with the olive oil mixture.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
- Top the salad with sliced grilled chicken and sprinkle with feta cheese.
- Drizzle balsamic vinaigrette dressing over the salad and toss gently to combine.
