- 8 ounces pasta (penne or fettuccine recommended)
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 cup spinach (optional)
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add to the skillet.
- Cook the chicken for about 5-7 minutes, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Add the heavy cream, chicken broth, and Italian seasoning. Stir to combine and bring to a simmer.
- Add the Parmesan cheese and stir until melted and the sauce is creamy.
- If using, add the spinach and cook until wilted.
- Return the chicken to the skillet and add the cooked pasta. Toss to combine and heat through.
- Serve warm, garnished with fresh parsley.
