  • 8 ounces pasta (penne or fettuccine recommended)
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 cup spinach (optional)
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add to the skillet.
  3. Cook the chicken for about 5-7 minutes, until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the heavy cream, chicken broth, and Italian seasoning. Stir to combine and bring to a simmer.
  6. Add the Parmesan cheese and stir until melted and the sauce is creamy.
  7. If using, add the spinach and cook until wilted.
  8. Return the chicken to the skillet and add the cooked pasta. Toss to combine and heat through.
  9. Serve warm, garnished with fresh parsley.
