Crispy and delicious chicken taquitos made in the air fryer. Perfect for a quick snack or appetizer!
Ingredients

- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 8 small corn tortillas
- Cooking spray or olive oil
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine shredded chicken, cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper. Mix well.
- Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
- Place about 2 tablespoons of the chicken mixture in the center of each tortilla. Roll tightly and secure with a toothpick if needed.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Spray the taquitos lightly with cooking spray or brush with olive oil.
- Place the taquitos in the air fryer basket in a single layer, making sure they do not touch.
- Cook for 8-10 minutes, flipping halfway through, or until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving. Enjoy with your favorite dipping sauces!
Notes
- For extra flavor, add some chopped cilantro or jalapeños to the chicken mixture.
- You can use store-bought rotisserie chicken to save time.
- Serve with guacamole, sour cream, or additional salsa for dipping.
