- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour, for dredging
- 1/4 cup olive oil
- 1/4 cup unsalted butter
- 1/2 cup fresh lemon juice
- 1 cup chicken broth
- 1/4 cup capers, rinsed and drained
- 2 tablespoons fresh parsley, chopped
- Lemon slices, for garnish
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Dredge each chicken breast in flour, shaking off excess.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
- Add chicken breasts to the skillet and cook until browned and cooked through, about 3-4 minutes per side. Remove from skillet and set aside.
- In the same skillet, add lemon juice, chicken broth, and capers. Bring to a boil, scraping up any browned bits from the pan.
- Reduce heat and simmer for 5 minutes. Whisk in remaining butter until melted.
- Return chicken to the pan and simmer for another minute to coat with sauce.
- Garnish with parsley and lemon slices before serving.
