- 8 oz lo mein noodles
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken breast, sliced thinly
- 2 cups mixed vegetables (carrots, bell peppers, broccoli, snap peas)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- Green onions, sliced for garnish
- Sesame seeds for garnish (optional)
Instructions
- Cook the lo mein noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes.
- Add the mixed vegetables, garlic, and ginger to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Stir in the soy sauce, oyster sauce, and sesame oil. Mix well to combine.
- Add the cooked lo mein noodles to the skillet and toss to coat with the sauce and chicken mixture.
- Pour in the cornstarch mixture to thicken the sauce, stirring constantly until the sauce is glossy and thick.
- Remove from heat and garnish with sliced green onions and sesame seeds if desired. Serve hot.
Notes
- Feel free to customize the vegetables based on your preferences or what you have on hand.
- For a spicier version, add a splash of sriracha or red pepper flakes.
