  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breast, sliced thinly
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli, snap peas)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Green onions, sliced for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the lo mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes.
  4. Add the mixed vegetables, garlic, and ginger to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. Stir in the soy sauce, oyster sauce, and sesame oil. Mix well to combine.
  6. Add the cooked lo mein noodles to the skillet and toss to coat with the sauce and chicken mixture.
  7. Pour in the cornstarch mixture to thicken the sauce, stirring constantly until the sauce is glossy and thick.
  8. Remove from heat and garnish with sliced green onions and sesame seeds if desired. Serve hot.

Notes

  • Feel free to customize the vegetables based on your preferences or what you have on hand.
  • For a spicier version, add a splash of sriracha or red pepper flakes.
