- 2 large chicken breasts, cut into fillets
- 1 cup buttermilk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 cup all-purpose flour
- 1 cup peanut oil (or your choice of frying oil)
- Buns and toppings (optional, for serving)
Instructions
- In a mixing bowl, combine buttermilk, salt, pepper, garlic powder, onion powder, and paprika. Add the chicken fillets and marinate in the refrigerator for at least 1 hour, or overnight for best results.
- In a shallow dish, add the flour and season with additional salt and pepper, if desired.
- Heat the peanut oil in a deep skillet or fryer over medium-high heat until it reaches 350°F (175°C).
- Remove the chicken from the buttermilk mixture, allowing excess to drip off. Dredge each piece in the seasoned flour, pressing lightly to ensure the flour adheres.
- Carefully place the breaded chicken into the hot oil and fry for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
- Serve on buns with your choice of toppings or enjoy as is!
Notes
- For a spicier version, add cayenne pepper to the flour mixture.
- Make sure the oil is hot enough before frying to avoid greasy chicken.
- You can also bake the chicken at 400°F (200°C) for 20-25 minutes for a healthier option.
