  • 2 large chicken breasts, cut into fillets
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 1 cup peanut oil (or your choice of frying oil)
  • Buns and toppings (optional, for serving)

Instructions

  1. In a mixing bowl, combine buttermilk, salt, pepper, garlic powder, onion powder, and paprika. Add the chicken fillets and marinate in the refrigerator for at least 1 hour, or overnight for best results.
  2. In a shallow dish, add the flour and season with additional salt and pepper, if desired.
  3. Heat the peanut oil in a deep skillet or fryer over medium-high heat until it reaches 350°F (175°C).
  4. Remove the chicken from the buttermilk mixture, allowing excess to drip off. Dredge each piece in the seasoned flour, pressing lightly to ensure the flour adheres.
  5. Carefully place the breaded chicken into the hot oil and fry for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  6. Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
  7. Serve on buns with your choice of toppings or enjoy as is!

Notes

  • For a spicier version, add cayenne pepper to the flour mixture.
  • Make sure the oil is hot enough before frying to avoid greasy chicken.
  • You can also bake the chicken at 400°F (200°C) for 20-25 minutes for a healthier option.
