- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup shredded cheddar cheese
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and season with garlic powder, onion powder, salt, and pepper. Cook until chicken is browned and cooked through.
- Stir in the cream of chicken soup, chicken broth, and frozen mixed vegetables. Bring to a simmer.
- Add the cooked rice and half of the shredded cheese. Stir until well combined.
- Sprinkle the remaining cheese on top and cover the skillet. Cook for an additional 5 minutes until the cheese is melted.
- Serve hot and enjoy!
