Ingredients

  • 1 lb chicken breast, diced
  • 1 cup shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced chicken and season with garlic powder, onion powder, salt, and pepper. Cook until chicken is browned and cooked through.
  3. Stir in the cream of chicken soup, chicken broth, and frozen mixed vegetables. Bring to a simmer.
  4. Add the cooked rice and half of the shredded cheese. Stir until well combined.
  5. Sprinkle the remaining cheese on top and cover the skillet. Cook for an additional 5 minutes until the cheese is melted.
