Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. In a bowl, marinate chicken slices with soy sauce, sesame oil, salt, and pepper for 15 minutes.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add garlic, ginger, and mixed vegetables. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  6. In a small bowl, mix cornstarch with chicken broth, rice vinegar, and honey until smooth.
  7. Return the chicken to the skillet and pour the sauce over the chicken and vegetables. Stir well to combine and cook for another 2-3 minutes until the sauce thickens.
  8. Serve hot over cooked rice or noodles.
