A quick and easy Asian chicken stir-fry packed with vibrant vegetables and a flavorful sauce.

- 1 lb boneless, skinless chicken breasts, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas)
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- In a bowl, marinate chicken slices with soy sauce, sesame oil, salt, and pepper for 15 minutes.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic, ginger, and mixed vegetables. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- In a small bowl, mix cornstarch with chicken broth, rice vinegar, and honey until smooth.
- Return the chicken to the skillet and pour the sauce over the chicken and vegetables. Stir well to combine and cook for another 2-3 minutes until the sauce thickens.
- Serve hot over cooked rice or noodles.
