Ingredients

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 8 small corn or flour tortillas
  • Non-stick cooking spray

Instructions

  1. In a large bowl, combine the shredded chicken, cheese, salsa, chili powder, garlic powder, cumin, and salt. Mix well until everything is evenly combined.
  2. Warm the tortillas in a microwave for about 30 seconds to make them pliable.
  3. Place about 2 tablespoons of the chicken mixture onto one side of each tortilla. Roll the tortilla tightly around the filling and place it seam-side down on a plate.
  4. Preheat the air fryer to 400°F (200°C).
  5. Spray the taquitos lightly with non-stick cooking spray.
  6. Arrange the taquitos in the air fryer basket in a single layer. Don’t overcrowd; you may need to cook in batches.
  7. Air fry for 6-8 minutes or until golden brown and crispy, shaking the basket halfway through cooking.
  8. Remove the taquitos from the air fryer and let them cool slightly before serving. Serve with additional salsa or guacamole if desired.
