A quick and healthy meal featuring juicy chicken thighs and colorful vegetables, cooked to perfection in the air fryer.

- 4 chicken thighs, boneless and skinless
- 2 cups mixed vegetables (bell peppers, zucchini, carrots, etc.)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 teaspoon dried Italian herbs (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine the chicken thighs and mixed vegetables.
- Drizzle with olive oil and season with garlic powder, onion powder, paprika, salt, pepper, and Italian herbs. Toss until everything is well coated.
- Place the chicken and vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Cook for 20-25 minutes, shaking the basket halfway through, until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the vegetables are tender.
- Remove from the air fryer and let rest for a few minutes before serving.
Notes
- Feel free to substitute chicken breasts or drumsticks if preferred.
- You can use any vegetables you have on hand; broccoli, asparagus, or green beans work great too.
- For extra flavor, marinate the chicken for an hour before cooking.
