Ingredients

  • 4 chicken thighs, boneless and skinless
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, etc.)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the chicken thighs and mixed vegetables.
  3. Drizzle with olive oil and season with garlic powder, onion powder, paprika, salt, pepper, and Italian herbs. Toss until everything is well coated.
  4. Place the chicken and vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
  5. Cook for 20-25 minutes, shaking the basket halfway through, until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the vegetables are tender.
  6. Remove from the air fryer and let rest for a few minutes before serving.

Notes

  • Feel free to substitute chicken breasts or drumsticks if preferred.
  • You can use any vegetables you have on hand; broccoli, asparagus, or green beans work great too.
  • For extra flavor, marinate the chicken for an hour before cooking.
