Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  2. Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the leftover marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  6. Remove the chicken from the grill and let it rest for a few minutes before slicing.
