- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 lemons
- Zest of 1 lemon
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- Salt and pepper to taste
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and discard the leftover marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
