Ingredients

  • 1 lb ground turkey
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving
  • Chopped green onions for garnish

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the minced garlic and ginger, sauté for 30 seconds until fragrant.
  3. Add the ground turkey to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the mixed vegetables and continue to cook for another 3-4 minutes until they are tender.
  5. Pour in the soy sauce and sesame oil. Stir well to combine and cook for an additional 2 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot over cooked rice or noodles, garnished with chopped green onions.

Notes

  • Feel free to use any vegetables you have on hand.
  • For added spice, consider adding red pepper flakes or sriracha.
