Ingredients

- 1 lb ground turkey
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
- Chopped green onions for garnish
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add the minced garlic and ginger, sauté for 30 seconds until fragrant.
- Add the ground turkey to the pan, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the mixed vegetables and continue to cook for another 3-4 minutes until they are tender.
- Pour in the soy sauce and sesame oil. Stir well to combine and cook for an additional 2 minutes.
- Season with salt and pepper to taste.
- Serve hot over cooked rice or noodles, garnished with chopped green onions.
Notes
- Feel free to use any vegetables you have on hand.
- For added spice, consider adding red pepper flakes or sriracha.
