A healthy taco bowl meal prep for easy lunches.
Ingredients

- 1 cup brown rice
- 1 pound ground turkey
- 1 can black beans, drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1 cup shredded cheese
- 1/2 cup salsa
Instructions
- Cook the brown rice according to package instructions.
- In a skillet, brown the ground turkey over medium heat.
- Add taco seasoning to turkey and stir well.
- Mix in black beans, corn, and diced tomatoes.
- Cook for an additional 5 minutes.
- Divide rice into meal prep containers.
- Top each container with the turkey mixture.
- Add avocado, lettuce, cheese, and salsa.
- Seal containers and store in the fridge.
Notes
- Adjust seasoning to taste.
- Use quinoa instead of rice for a different base.
- Can be eaten warm or cold.
- Store for up to 5 days in the refrigerator.
