- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes.
- Cut sweet potatoes into cubes.
- In a bowl, toss sweet potatoes with olive oil, salt, pepper, and paprika.
- Spread sweet potatoes on a baking sheet.
- Bake for 25-30 minutes until tender.
- In meal prep containers, layer sweet potatoes, black beans, corn, and bell pepper.
- Top with sliced avocado and cilantro.
