  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes.
  3. Cut sweet potatoes into cubes.
  4. In a bowl, toss sweet potatoes with olive oil, salt, pepper, and paprika.
  5. Spread sweet potatoes on a baking sheet.
  6. Bake for 25-30 minutes until tender.
