Ingredients

  • 1.5 lbs of steak
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups of mixed vegetables (broccoli, bell peppers, carrots)
  • 1 cup of quinoa

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub steak with olive oil, salt, pepper, garlic powder, and onion powder.
  3. Place steak on a baking sheet and roast for 20-25 minutes.
  4. While steak cooks, prepare quinoa according to package instructions.
  5. Steam mixed vegetables until tender.
  6. Slice steak after resting for 5 minutes.
  7. Divide steak, quinoa, and vegetables into meal prep containers.
