A simple and convenient pasta meal prep recipe.
Ingredients
Scale
- 2 cups of pasta
- 1 tablespoon of olive oil
- 1 cup of cherry tomatoes, halved
- 1 cup of spinach
- 1/2 cup of grated Parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Cook the pasta according to package instructions.
- Drain the pasta and set aside.
- In a large pan, heat olive oil over medium heat.
- Add cherry tomatoes and cook until soft.
- Add spinach and cook until wilted.
- Mix in the cooked pasta.
- Add Parmesan cheese, salt, and pepper. Stir well.
- Divide into meal prep containers.
Notes
- Store in the refrigerator for up to 5 days.
- Reheat in the microwave before serving.
- Add cooked protein for extra nutrition.
