Ingredients

- 2 cups quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 can chickpeas, drained
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, and chickpeas.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Divide into meal prep containers and refrigerate.
