Ingredients

- 2 cups cooked brown rice
- 1 pound chicken breast, diced
- 1 cup broccoli florets
- 1 cup bell peppers, chopped
- 1 cup carrots, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the brown rice according to package instructions.
- In a large pan, heat olive oil over medium heat.
- Add diced chicken and cook until browned, about 5-7 minutes.
- Add broccoli, bell peppers, and carrots to the pan.
- Stir in soy sauce, garlic powder, salt, and pepper.
- Cook for another 5 minutes until vegetables are tender.
- Combine the chicken mixture with the cooked rice.
- Let it cool, then portion into freezer-safe containers.
- Freeze for up to 3 months.
