Ingredients

- 1 cup of black beans, rinsed and drained
- 1 cup of corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup of cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine quinoa, black beans, corn, red bell pepper, and cilantro.
- Add lime juice, salt, and pepper. Mix well.
- Divide into meal prep containers.
- Top with diced avocado before serving.
Notes
- Store in the refrigerator for up to 4 days.
- Reheat in the microwave before serving.
