Ingredients

- 1 cup brown rice
- 1 can black beans, rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 large whole wheat tortillas
- Salt and pepper to taste
Instructions
- Cook the brown rice according to package instructions.
- In a large bowl, combine black beans, corn, red bell pepper, cumin, chili powder, salt, and pepper.
- Add the cooked rice to the bowl and mix well.
- Lay out the tortillas and divide the filling evenly among them.
- Add avocado slices on top of the filling.
- Roll up the burritos tightly, tucking in the sides.
- Wrap each burrito in foil or plastic wrap.
- Store in the refrigerator for up to 5 days.

- Feel free to customize with your favorite vegetables.
- These burritos can be frozen for up to 3 months.
- Reheat in the microwave or oven when ready to eat.
