A simple meal prep breakfast sandwich that you can make ahead for busy mornings.
Ingredients

- 4 whole grain English muffins
- 4 large eggs
- 1 cup spinach
- 4 slices of cheddar cheese
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a muffin tin with cooking spray.
- Crack an egg into each muffin cup.
- Add salt and pepper to taste.
- Bake for 15 minutes or until the eggs are set.
- While the eggs are baking, lightly toast the English muffins.
- Once the eggs are done, assemble the sandwiches: place a slice of cheese on the bottom half of each muffin, add spinach, and top with an egg.
- Cover with the other muffin half.
- Wrap each sandwich in foil and store in the fridge.
Notes
- These sandwiches can be frozen for longer storage.
- Feel free to add other ingredients like bacon or avocado.
- Reheat in the microwave for 1-2 minutes before serving.
