Description

A simple meal prep breakfast sandwich that you can make ahead for busy mornings.


Ingredients

  • 4 whole grain English muffins
  • 4 large eggs
  • 1 cup spinach
  • 4 slices of cheddar cheese
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a muffin tin with cooking spray.
  3. Crack an egg into each muffin cup.
  4. Add salt and pepper to taste.
  5. Bake for 15 minutes or until the eggs are set.
  6. While the eggs are baking, lightly toast the English muffins.
  7. Once the eggs are done, assemble the sandwiches: place a slice of cheese on the bottom half of each muffin, add spinach, and top with an egg.
  8. Cover with the other muffin half.
  9. Wrap each sandwich in foil and store in the fridge.
