- 4 large eggs
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked sausage or bacon
- 1 cup shredded cheese
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
- In a bowl, whisk the eggs and season with salt and pepper.
- In a skillet, sauté bell peppers and onions until soft.
- Add cooked sausage or bacon to the skillet and mix well.
- Pour the eggs into the skillet and scramble until fully cooked.
- Remove from heat and stir in the shredded cheese.
- Lay out the tortillas and divide the egg mixture among them.
- Wrap the tortillas tightly and place them in a storage container.
- Refrigerate or freeze until ready to eat.
Notes
- For a vegetarian option, omit the meat.
- Feel free to add any other vegetables you like.
- These burritos can be reheated in the microwave or oven.
