Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved

Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Let quinoa cool after cooking.
- Layer ingredients in mason jars starting with quinoa, then veggies, and cheese.
- Mix olive oil, lemon juice, salt, and pepper in a bowl.
- Pour dressing over the layered ingredients.
- Seal jars and store in the refrigerator.
