Ingredients

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Let quinoa cool after cooking.
  5. Layer ingredients in mason jars starting with quinoa, then veggies, and cheese.
  6. Mix olive oil, lemon juice, salt, and pepper in a bowl.
  7. Pour dressing over the layered ingredients.
  8. Seal jars and store in the refrigerator.
