Description

A simple low calorie meal prep recipe.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup chopped broccoli
  • 1 cup diced bell peppers
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Meanwhile, heat olive oil in a pan over medium heat.
  5. Add broccoli and bell peppers, sauté for 5 minutes.
  6. Stir in cherry tomatoes and cook for another 2 minutes.
  7. Fluff the quinoa with a fork and mix with the sautéed vegetables.
  8. Season with salt and pepper.
