A simple low calorie meal prep recipe.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped broccoli
- 1 cup diced bell peppers
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Meanwhile, heat olive oil in a pan over medium heat.
- Add broccoli and bell peppers, sauté for 5 minutes.
- Stir in cherry tomatoes and cook for another 2 minutes.
- Fluff the quinoa with a fork and mix with the sautéed vegetables.
- Season with salt and pepper.

- Store in an airtight container in the fridge.
- Good for up to 4 days.
