A simple keto meal prep for the week.
Ingredients
Scale
- 2 cups of cauliflower rice
- 1 pound of chicken breast
- 1 cup of broccoli florets
- 1/2 cup of shredded cheese
- 2 tablespoons of olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix chicken breast with olive oil, salt, and pepper.
- Place chicken on a baking sheet and bake for 20 minutes.
- While chicken is baking, steam broccoli for 5-7 minutes.
- Once chicken is cooked, shred it and mix with cauliflower rice and broccoli.
- Top with shredded cheese and bake for an additional 5 minutes.
- Let cool and portion into meal prep containers.
Notes
- Store in the refrigerator for up to 5 days.
- Reheat in the microwave before serving.
- Adjust seasoning as desired.
