Description

A simple keto meal prep for the week.


Ingredients

Scale
  • 2 cups of cauliflower rice
  • 1 pound of chicken breast
  • 1 cup of broccoli florets
  • 1/2 cup of shredded cheese
  • 2 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix chicken breast with olive oil, salt, and pepper.
  3. Place chicken on a baking sheet and bake for 20 minutes.
  4. While chicken is baking, steam broccoli for 5-7 minutes.
  5. Once chicken is cooked, shred it and mix with cauliflower rice and broccoli.
  6. Top with shredded cheese and bake for an additional 5 minutes.
  7. Let cool and portion into meal prep containers.

Notes

  • Store in the refrigerator for up to 5 days.
  • Reheat in the microwave before serving.
