Ingredients
- Chicken Breast – 2 lbs
- Brown Rice – 4 cups
- Broccoli – 2 cups
- Olive Oil – 1/4 cup
- Garlic – 4 cloves
- Salt – 1 tsp
- Pepper – 1 tsp
- Italian Seasoning – 1 tbsp
Instructions
- Preheat your oven to 400°F (200°C).
- Marinate chicken breast with olive oil, garlic, salt, pepper, and Italian seasoning.
- Place the chicken on a baking sheet and bake for 25-30 minutes.
- While the chicken is baking, cook brown rice according to package instructions.
- Steam broccoli until tender.
- Once the chicken is done, slice it into portions.
- Divide rice, broccoli, and chicken into meal prep containers.
- Store in the refrigerator for up to 5 days.
Notes
- Feel free to substitute chicken with tofu for a vegetarian option.
- Adjust seasonings according to your taste.
