Description

A simple and delicious crockpot meal prep recipe.


Ingredients

Scale
  • 2 pounds of chicken breast
  • 1 cup of diced onions
  • 2 cups of chopped vegetables (carrots, bell peppers, zucchini)
  • 4 cloves of garlic, minced
  • 1 cup of chicken broth
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1 tablespoon of dried herbs (thyme, oregano)

Instructions

  1. Prepare all ingredients.
  2. Heat olive oil in a pan and sauté onions and garlic until soft.
  3. Add chicken breast to the crockpot.
  4. Add sautéed onions, garlic, vegetables, chicken broth, salt, pepper, and herbs to the crockpot.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Shred the chicken before serving.
