A simple and delicious crockpot meal prep recipe.
Ingredients
Scale
- 2 pounds of chicken breast
- 1 cup of diced onions
- 2 cups of chopped vegetables (carrots, bell peppers, zucchini)
- 4 cloves of garlic, minced
- 1 cup of chicken broth
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of olive oil
- 1 tablespoon of dried herbs (thyme, oregano)
Instructions
- Prepare all ingredients.
- Heat olive oil in a pan and sauté onions and garlic until soft.
- Add chicken breast to the crockpot.
- Add sautéed onions, garlic, vegetables, chicken broth, salt, pepper, and herbs to the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken before serving.
Notes
- Store leftovers in airtight containers.
- This meal can be frozen for later use.
- Adjust seasoning to taste.
