Ingredients

- 4 large eggs
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked black beans
- 1 cup shredded cheese
- 4 whole wheat tortillas
- Salt and pepper to taste
Instructions
- In a pan, sauté bell peppers and onions until soft.
- Whisk eggs in a bowl, season with salt and pepper.
- Pour eggs into the pan and scramble until fully cooked.
- Add black beans and mix well.
- Lay tortillas flat and fill each with the egg mixture and cheese.
- Roll up the tortillas tightly.
- Wrap each burrito in foil and store in the refrigerator.
