Description

Ingredients

  • 1 cup diced onions
  • 1 cup cooked black beans
  • 1 cup shredded cheese
  • 4 whole wheat tortillas

Instructions

  1. In a pan, sauté bell peppers and onions until soft.
  2. Whisk eggs in a bowl, season with salt and pepper.
  3. Pour eggs into the pan and scramble until fully cooked.
  4. Add black beans and mix well.
  5. Lay tortillas flat and fill each with the egg mixture and cheese.
  6. Roll up the tortillas tightly.
  7. Wrap each burrito in foil and store in the refrigerator.
